A friend came over to play Wednesday night, and I decided to cook dinner. The only problem was, my fridge was pretty bare. I grabbed out a few things and came up with this:
2 chicken breasts, cubed
1/2 chopped onion
1 can cream of mushroom soup
1 pkg. frozen chopped spinach
cook the chicken with the onion until onion is translucent and chicken is browned.
Stir in mushroom soup
Add the frozen spinach.
When warmed through, roll up a spoonful of the mixture in a whole wheat tortilla.
Gotta figure out the spices though, I used salt and pepper, some garlic and basil, but there's probably a better spice mix for it. . The spinach was a bit overwhelming... fun to play with though!
